Recipe: Pumpkin Pie Shakeology
I'm pretty hesitant to let go of fall weather (even though it snowed yesterday) so I'm holding on tight to the autumn spirit with this Pumpkin Pie Shakeology recipe!
I've talked about the benefits of Shakeology before, but pumpkin is also pretty impressive.
Benefits:
1. Vitamin A aids in your vision
2. Pumpkin is high in fiber which means you stay full for longer
3. Pumpkins are a source of beta-carotene, which may reduce your risk of cancer (according to the National Cancer Institute)
4. The potassium in pumpkin helps restore your electrolytes after a workout.
Pumpkin Pie Shakeology
1 scoop Vanilla Shakeology
1/2 cup canned pumpkin puree
3/4 cup unsweetened vanilla almond milk
1 tsp pure maple syrup (can leave out if you don't like it too sweet)
1 tsp pumpkin pie spice
1 Tbsp chopped pecans
Yum! I also add a few ice cubes and sometimes water to thin it out - just depends what I'm in the mood for. If you don't have pumpkin pie spice, you can do a couple shakes of cinnamon and nutmeg to simulate it.
Looking for something thicker you can eat with a spoon? I know some people don't like the idea of drinking their breakfast so you can switch out the vanilla almond milk for fat free unsweetened yogurt and a little vanilla extract. Instead of blending the pecans in, use them as a topping!
